Old snake, new tricks?

I have a gopher snake, probably around 6 years old. I've had her since she was 2 years old. When I got her, she was docile, completely unlike descriptions I've read of pits. No hissing, no tail-rattling, no puffing. She's still easy to handle, but every so often she takes a strike at me, and tonight when I reached in for her water bowl, she rattled her tail at me. Do they have to grow into these behaviors, or am I doing something wrong to suddenly stimulate a previously unused response in her? Do pits 'come of age' , and could that be causing a change in her temperment? I'm not terribly worried, since she's not actually biting or being overly aggressive. Just curious as to why she would suddenly start doing these things. Thanks!

Actually it is usually the opposite, as young snakes they are pretty hyper and tend to settle down with age. I bet you startled her in some way or she was trying to go into shed or the cage had been changed around, if you look at the traffic around her cage that day or something like that I bet you can fiqure out what happend.
