rheostat vs thermostat...what's the difference?

I need to find something to plug my UTH into to control temps...finding very little product decriptions to tell me the difference in these.

A rheostat allows you to adjust the heat setting to low/med/high like a dimmer. In fact, you can just buy a $8 plug-in lamp dimmer from Walmart for your UTH.

A thermostat has a probe you have to place on the substrate in the tank. It'll detect the temperature and adjust the heat for you. There are two types of thermostats: proportional and non-proportional. Non-proportional works by turning your UTH on and off to maintain a desired temp.
