my bearded lizard as shed all over except for a swathe across the shoulders which is 1/2"to 1"wide from shoulder to shoulder. It's been at least a week. Is this something to worry about? Or an indication there's something off about his environment or diet?

It's not uncommon for them to shed in parts. You can help it along by soaking in a warm bath.
