She is trying to bite (obviously stressed from the trip) and getting used to her enclosure in a little tub of water within it. Would it have been better to get a hatchling or is she just as tameable?

No, I don't think it would have been better if you'd purchased a hatchling. I've gotten them at 3 weeks old, 4 months old, and yearlings. We also have these 2 young adult males here right now that have had no prior socialization at all. All of the younger ones and yearlings have tamed down nicely and I think the two older males will also without too much work.
It may take a little more patience and caution with a yearling but if you make the effort it will be worth it. Be firm yet gentle, talk and talk and talk to it, put a worn t-shirt in the enclosure with it, and watch the teeth.

I feel more confident that she'll calm down after observing her today and talking to Bob about why he chose her. I think she'll be great! I'll have some pics in the next day or two, I don't want to add to her stress right now.
