Mine loves honeydew and watermelon. Sometimes I mash it to make a paste, then mix his calicum and vit. suppliments in to it...that way I know eating his vitamins will be irresitable, and the powders don't wash away so much.
Do you put the paste on a rock or something or do you just float it?
I hand feed my turtle, something I started doing a long time ago to help him overcome his skittishness. I can hold food between two fingers and he comes and snatches it out. So, when I make a melon/vitamin paste I just hold a glob on my finger and he comes and takes it off. Granted, he's 6" so not enormous, and when he does this he is scraping (or I guess actually) biting it off my finger. But this is fine since he doesn't have super chompy jaw strength, and as his mouth is hitting my fingers when he is taking food, it had never been more than a brushing feeling.
Of course not all turtles have reliable "table manners" where someone feels comfortable just sticking a finger in. If that's the case with you, then I would try floating the paste by itself on the water, or maybe smearing it on some greens.
