Has anyone out there ever had a problem with sphagnum moss? I recently read that the moss could produce a fungal problem. If anyone else has ever heard about anything like this let me know.

I hadn't heard about that. If you are looking for something to hold moisture, there is another option anyway. I've started using a bedding called Critter Care which is made from recycled newspaper. It works good in a moist hide box.
Almost anything that stays moist can cause fungii to grow. Sphagnum moss is no different, but it takes months and months. In my chondros enclosure I have a mixture of spagnum moss and a couple different types of coconut husk products.
