Keeping Food fresh

origitat Jan 11, 2005 09:31 PM

Im just curious, what is the best way to keep the vegetables fresh. The market only sells them in a large quantity so I was just curious what is the best way to keep the greens fresh for as long as possible.

This is what I do. I fill the sink with water, swish the greens around in it to rinse off dirt and sand and remove any gross pieces. After that I lay them on a few layers of paper towels, roll them up and stick the whole thing in a big zipper bag which I only close halfway to allow air circulation. Then the bag goes into a drawer in the fridge. I've found that it lasts longer if the paper towels are slightly damp all the way through but not dripping wet.

Tupperware makes a lovely product call Fridge Smart... I spin off greens and store in there.

my boyfriend keeps it fresh by putting it in a jar, and using one of those (hand held) pumps that takes out most of the air, and then seals the top.
They make the machine operated vacuum pumps for bags as well, but this hand pump seems to work just as well.

I think he found it on ebay.

Ziploc sells Vegetable bags that keep chopped and unchopped greens in good condition for 5 days. I order them online since I can't find them in the stores.
