When I first got my albino female, it took me about a month to get her to eat, but I kept at it, and she started eating and was doing great, I was feeding her crickets. Then she just stopped eating them, and I couldn't figure it out, so I switched to mealies, and she loved them, not she doesn't eat them as much either, and she loves superworms, it's like she just gets tired of the same food, she is a very picky eater. Try switching the food you are giving him, and also, I had to take all the hides out and just put the food in to get her to eat at first, you might want to try that too. Also, make sure he doesn't have parasites, have you had a fecal done?

If he feeds from a dish it is quite easy to see if he is eating. Just put 10 mealies in the dish every night and the next morning count to see how many are gone (check around the tank too just to be sure some didn't escape on their own). Again, what is your setup like? If we had more information we could probably provide more hints. Good luck!
