Check out this section of the Florida Fish and Wildlife Conservation Commission's website. It has all the information you seek.

You can go to the "care sheets/FAQ's/features" section that's at the top of most pages. That will answer any question you have about particular species. It is very difficult in Florida to get a permit. It is very time consuming. You have to be an apprentice with someone for 5 years and there's a lot more to it.
Good luck,

Tony,

In a nutshell, Florida considers all caimans (except the Black caiman) to be in Class II, and a license for those comes with requirements: 1000 hours of practical experience, performed within a year's time, which is documented and confirmed by a minimum of two qualifiying letters of reference. If not 1000 hours, then 100 hours within a year's time, with reference letters for such, is acceptable if the applicant is able to pass a written test with a minimum score of 80%.

That's it.
