You are a well opinionated group. And I of course need an opinion. 
I have sorta been making a career of going to a 2 year college lol. In the process of working towards an Arts & Sciences: Biological Science Associates degree in my spare time, I was also taking a bunch of classes that had nothing to do with that degree... they were just for fun. However, the closer I got to finishing the degree, I found out that all those extra fun classes didn't really go to waste. I essentially ended up working on 4 AA degrees at the same time (the other 3 being: Arts & Sciences, Arts & Sciences: Arts & Humanities, and General Studies). The last class I took (SOC: Society & Technolgy) managed to allow me to knock out 3 of those degrees as all requirements having been met. The thing I found out was that the SOC class that finished off those other 3 degrees couldn't be applied as the requirement for that last degree as that degree stipulated I needed another gen ed social science class that was not part of the SOC series.
So, I still need one more gen ed social science class to knock out that 4th degree. I don't feel comfortable with any of the economic classes or the psycology classes. That essentially leaves me with geography or political science or interdisciplinary/emerging issues classes to choose from for that last requirement.
Between work and money and stuff, it's hard to find time to take classes these days, but I am hoping to get the chance this summer or fall semester to finally take that last class I need.
The gen ed list of classes that could meet the requirement that I kinda find interesting are:
GRY: World Regional Geography
GRY: Introductory Cultural Geography
POL: International Relations
POL: Political Ideologies
POL: Social Policy
HST: Global Perspectives
SPA: The Cultures of the Americas
I'd probably ump for the spanish class if I could guarantee a certain professor would be teaching it, but I can't...so it leaves me with the rest. I'm really just curious to see which class any of you would think would be most beneficial and/or fun to take?
....there have been rumors the the school may be trying for a 4 year accreditation. Maybe if they do eventually change over I can find myself winding up with a BA degree and not have to do any extra work (or very little extra needed) or worry about not being able to transfer credits as you do when switching schools.
