Feeding my tortoieses better.. please help!!!

Hello all,

I have a baby sulcutta and I feed him endive and escarole with yellow squash. I have given him dandelion and mustard greens but he tends to shy from them. What are some things that I can give him that he will eat better??? Any helpwould be great.
