what type of live plants are safe to use with my anole?

The only ones definitely NOT to use are those with milky sap since that is a good indication that they are toxic. You can use Diffenbachia, Sanseveria, Pothos, Scheffeleria, all sorts of Ferns and anything else that will fit into your enclosure. Make sure that they are plants that will tolerate low or moderate light conditions -- most houseplants will work fine. You can even use most native plants as well. I have used wild violets, for example.
I would stay away from Virginia Creeper though. It starts off fine but once established is VERY aggressive. It will grow from 1-2" per day and is very difficult to remove once it gets started. That is one mistake I won't make again!
