I just bought a 30 gallon for my anole, but before I put him in it, I'd like to put real plants in the terrarium. Can someone suggest some good plants? And would it be better to put them in their own containers or directly into the substrate?

Some of the smaller varieties of Diffenbachia, Sansaverias, Pothos, smaller varieties of variegated Geranium, many of the Ferns, English Ivy, etc. In short, most houseplants. Avoid any with miky sap since they are generally toxic. Make sure to use varieties that are for low or moderate light conditions. Keeping them in pots will control their size to some degree since it limits root growth. If you are planning on changing the environment from time to time, they are easier to tranplant if they are kept in pots.
I've had plants start to wilt because the pots they were in were too small. Maybe there is a certain size pot that will keep the plants from growing too large without wilting. Until I find out for sure I'll just keep using the much easier to use and clean plastic plants. I try not to stress my anoles anymore then I have to.
They probably wilted from insufficient watering. If you plant them in pots, you can keep them watered without saturating the substrate. I simply plant mine directly in the substrate. I have had no problems with mold probably because my substrate is compost which is highly absorbent.
