I placed my pair of Antaresia maculosa together on 3 Feb. I've never seen them mating, but the female looks fatter then usual. She is about to shed. Could she be gravid or is it too short of a time?

She could well be gravid although it takes about three months minimum between mating and egg laying. Good luck.

Can she be gravid, but this is not her pre-laying shed? Will she shed again before laying eggs? I am confused now.

It could be a random shed, pre ovulation shed or whatever.

Yes she can shed up to a couple of times whilst gravid, I had it last year where my female got an attack of the mites whilst gravid, after I had treated her she went into a shed cycle that had nothing to do with the pregnancy. But don't worry, I'm not saying that yours has mites at all!
