how can I tell the sexes aprt in lobster roaches? Do both have wings? and if so do they have to have wings to be old enough to breed? I have found plenty of info on how to breed them but no info on their life cycle or how fast they grow.

There is a difference in the shape of the abdomen - the female is more oval and thick (top to bottom), while the male has a more pointy shape. I have pictures - and you can find them online on roach sites too.
Both male & female must have wings be mature enough to produce offspring. The nymphs are born and depending upon food source and temperature, they reach maturity from 3-6 months.
