I think I found a good substrate, but need some more opinions.....

Humidity for a sulcata needs to be fairly low correct?? Ok well I found a substrate at the pet store i work at that is made from alfalfa, grain roughage, mainly. It comes in very small pellets, almost looks like rabbit food. Would this be ok for a sulcata? If not what are some other good substrates i could by or mix?

How high the humidity is depends on what size your sulcata is. Is this a little one that lives indoors? Little ones indoors need higher humidity than larger ones living outdoors.
In the wild they spend more time than people often think in higher humidity because when they burrow underground. It's more humid there than above ground.
You don't want them to eat too much alfalfa because it's so high in protein. The theory today is too low humidity combined with high protein foods may be the cause of pyramiding.
Of course nobody really knows for sure exactly what causes it but that theory seems to make some sense.

I've found this stuff at petco called "Critter Litter" and its made from natural grasses and not alfalfa... the pellets are a bit larger than than rabbit bedding too. My sulcata has never tried to eat it. Hope that helps.
