I know it is not advised to mix species, but what problems would one might expect from mixing a female Hermann's tortoise and a pair of bearded dragons?

Ive had my Kleinmanni with a small ornate uromastyx for years(in the winter), and they are both doing great.

The spread of parasites is the #1 reason you do not mix species. Just because you THINK they don't have anything, doens't mean they don't. And if a tort gets a beardie parasite, or vice versa, it's something they or anyone else of their species have ever dealt with before. It's one thing to get a parasite infection with something that is normal for you to get, it's a whole other ball game to get a "foreign" disease. My advice is and always will be, different species, different cage.
