do snakes tend to get darker before they shed? also is it bad to handle the snake during this stage?

Yes, they will get darker and you'll notice their eyes turn opaque, or "milked" over. While this is going on they can't see very well and will be stressed. So handling them more than really needed will only add to that stress and probably increase the likelihood of taking a hit from them. Give them a few days and their eyes should clear, and a few days later they should be shed and back to normal.
