What are their dispositions like as adults? I can't find that much info on EK's. I have MBK and gray banded if you want to make a comparison.

Eastern Kings are very nice snakes as adults, in my opinion. Typically they do not musk or bite if you handle them frequently. Actually, I don't have any adults that have ever bitten - the hatchlings and juvie's can be a little nippy though.
However, the males will hiss and throw their weight around during breeding season. All in all, they are a joy to work with and present no problems!

I've kept eastern kings off and on for the past 17 years. I have found them to be one of the more laid back colubrid species to keep in captivity, yet they seem to be more alert than corns or rat snakes. I think Peter was right about the babies being a bit nippy, but all colubrid babies are, and they quickly grow out of this as you spend time with them.
All of the eastern kings that I have kept had great appetites. Perhaps the best thing about an eastern king is that they stay pretty as they age. So many colubrids seem to fade in color as they age (corns being a good example), but the biggest eastern kings that I have seen seem to still maintain that brilliant contrast of black and white.
You can't go wrong with a nice eastern king...
