Well, usually mine wont eat his greens directly either, but he will eat em if the veggies are mixed with some eggs/dogfood. I also feed him crickets, meallies, earthworms, sometimes bird pellets (wich includes some healthy grains & seeds in the mix), greens (celery, kale, carrots, morning glory leafes, sometimes edible blossoms, etc, etc), fruits (apples, grapes, tomatoes, pears, papaya, mangoes, banana, etc, etc). Some people also feed their blueys pinky mice.
i also dust the food with vitamin calcium supplements bout once a week.
Some blueys are fed pinky mice (wich i tried once, and wont try again, its to stressfull for me and the mice), and some blueys are known to be fond of slugs & snails, just make sure they're pestiside free.
Other foods may also include grasshoppers, hissing roaches, waxworms, butterworms, silkworms, soaked rabbit pellets, soaked tortoise pellets, and other "conventional" reptile foods on the market, just for variety.

ALWAYS remove seeds from fruit as some are known to be poisonous to reptiles, NEVER feed citrus fruits (oranges, lemon, lime, and the like), as most reptiles dont have the proper metabolism to break down these fruits.

Some greens like spinach and lettuce are best fed sparringly, or not at all. Letuce is about 90% water and contains small amounts of fiber, and certain chemilcals in spinach are known to interfere with the absorbtion of calcium.

Mixing greens with fruit seems to ensure my skinks eat all their greens. They deffinitely like to eat the insects first, a combination of superworms and silkworms. In the past I have also mixed a little quality catfood in with his greens and they seem to consume that happily. I have also mixed in about a half teaspoon of non fat/unsweetened fruit yogurt time to time and they like that as well.
