Hi ryan - I know my plants quite well, but I know that victor (gomezvi) has used air plants and other interesting plants in setups. I put his name in the topic line to he will reply

In the meantime, Black Jungle specializes in many of these plants for terrariums so you might find some good info on their site.

Epiphytes (air plants) are plants that grow on trees. Generally speaking, I would think that they would be safe for use in a chameleon enclosure, but to be on the safe side, I would check on the species and make sure it is not toxic. If it does a low toxicity level, it might still be okay to use with your chameleon. Ficus and pothos both oxilates that could cause dermitis. However, I've used ficus and pothos safely with chameleons that eat plants, such as veileds.
I have used mounted orchids and other epiphytes in my chameleon enclosures with excellent results. I've used dendrobium, oncidium, and I had mixed results with phalonopsys (sp?).
Good luck!

Oh, in case you didn't get the spirit of my post:
Don't be afraid to experiment!
Always check on toxicity when working with non-proven plants and chameleons.
North Florida is a GREAT place to find some excellent plants. LUCKY!
