I have two young Easterns, Squirtle & Yurte. Squirtle eats more food than Yurtle, but both eat daily. Is the better eater likely to be a certain sex, like do males grow bigger & eat more, or is that likely nothing?

I've not noticed anything like this with my group, I think that the amount they eat determines who's a better survivour though, since in the wild they can't be 100% certain when their next meal will be so they gourge themselves on whats offered, but thats just my .2 on that.

That's a good question. Based on my own observations, gender doesn't seem to have anything to do with appetities or growth rates.
It really just depends on the individual: some hatchlings are more enthusiastic eaters than others and therefore tend to grow at a more rapid rate.
As for adults (using my group as an example), the largest adult Eastern I have here is a male, but so is the smallest. Go figure.
