Is it normal for my tortoise of 1 year old to bury herself most evenings around 8pm. I have read loads of books but have found nothing on this.

The pet shop have told me that she should not be burying herself, is this correct?

Does your tortoise have a dark hide box to go into? It is very normal for tortoises to seek shelter in the evening. If there is not an adequate dark hide box or overhang they will bury themselves to rest for the night.
