What is good for weight gain for a mini?? Are thier digestive systems as touchey as I hear they are??

They can indeed be touchy! But the main thing is to be consistent and not to over feed them. Work with your vet to get them on a good diet and stick with it.

As far as a miniatures digestive tract being any more touchly than a large horse breed is wrong. We have worked with large and small breeds for over 30 years and the problems are the same. Currently we have over 80 of the little guys. Pay attention to the amounts you feed, most folks overfeed and cause obesity in these little guys. A good quality grain, hay and frequent worming will be great for them. Realize they average about 250 - 350 pds., so adjust your feeding reginmine accordingly and you will be fine.
