How much food?

My cat weighs 12lbs. but should probably weigh around 10lbs. I feed her baked chicken in the a.m. and p.m. and 1/4 cup a day of dry, non-grain, food for overnight and anytime she wants to nibble throughout the day. How much chicken should I be giving her (in ounces)? I know you will want me to eliminate the dry food, but she really seems to "need" it. If I do stop feeding her that, she is going to want more chicken. Maybe I'm not giving her enough of the chicken. Every now and then I give don't give her the chicken and give her a small can of Wellness instead. She also gets boneless, skinless sardines in olive oil about once a month.

What you are giving her sounds good, other than the dry food. If you give her food twice a day, and she leaves a tiny bit, reduce it by that much. If she eats all you put out, and is looking for more, then you are not giving her enough. Cats will usually self regulate on a meat diet, but have a harder time with carbohydrates. It is not so bad if she doesn't eat all that she could, as the only known method to extend the average length of life is through a diet that contains only 70% of the calories of a normal diet.
