Do to hiking/camping in many areas of the southwest and loving it, I'm interested in moving to St. George, UT. Does anybody have any info on employment and such? (I'm looking into the satellite / cable tv / internet / home theater services)

Sounds wonderful. I had a thought after reading your post. I am not from UT or know anyone from there, but I view my local newspaper online often and can access the classified ads that way. Maybe you check to see if the St. George newspaper is online and check the classfieds for jobs?
