I don't think you can get a degree in herpetology anywhere. You CAN get a degree in zoology, ecology or some other biological science, and if you do it in a Uni with an active herp research group, then there should be plenty of herp-related material in the various courses, and the chance to do some project work involving herps.

As WW mentioned, there are no curriculums dedicated strictly to herpetology, or a “herpetology” degree available. However, there are some excellent opportunities available to immerse yourself into projects involving herps, should you chose a University with a faculty interested in such areas.
A few Universities harboring recognized herp programs, and faculty interested in such, would be the University of Texas-Austin, University of Tennessee-Knoxville, Marshall University-West Virginia, and Florida State University-Tallahassee.
There are many more, but these are some of the schools I have direct experience with.
There are a host of opportunities available to the student wishing to further their knowledge and experience within the realm of herpetology as well, just take a peek at the following link: http://www.parcplace.org/herpjobs/job_frames.htm
If you would like contact information regarding the programs for any of the schools I have mentioned, e-mail me directly and I will place you into contact with some faculty members I know.
Best of luck to you,

There has already been a lot of useful suggestions posted to this message. I would like to reccomend a couple other links to look at.
Society for the Study of Reptiles and Amphibians (SSAR) has a page on advice for aspiring herpetologists.

A few other good schools in the US with faculty that are good at encouraging herpetological research for undergrads are Cornell University (Ithaca, NY), UC Davis (Davis, CA), and UC Berkeley (Berkeley CA).
These websites may be useful:

To add to the schools that Jeff Mentioned, Auburn University and the University of Georgia/Athens also have Herpetology programs for Biology and Zoology majors.

as far as I'm aware, Florida State has nothing going on in herpetology. It's U of Florida that's the huge herp school.
