My dragons occasionally do the fake-death thing in their water bowl and I've come to accept that they're just soaking and pooping. A closer look and they're not very convincingly dead, but at first glance it freaked me out the first time I saw one almost completely submerged in the water with closed eyes. She pooped and then opened her eyes and looked at me like I was nuts.
It's probably skittish because a) its a baby, and b) it's in a tank in a pet store. Get it home, set it up in a nice roomy cage with lots of plants and hiding spots and a big ole water bowl and it'll grow up and calm down.
