Zig-zag isn't particularly predictable, though generally speaking, the more aberrant the parents, the more aberrant the offspring, though you'll get a range of normals (or almost normals), slight zig-zags, moderate zig-zags and heavily zig-zagged. So they don't breed 100% true.
