I live pretty far north in the US, and we leave our goldfish in the pond all winter. The top freezes over, but the bottom doesn't freeze. We've put fish in the pond when it was still pretty cold outside. I just put the fish in a plastic bag and let it float in the water for a while before releasing so the water gets close to the same temperature.
