cycling... no nitrite rise???

Hi... I started my 5 gallon tank 3/15... added to red wag platies to help cycle the tank, added all necessary additives and have been testing water samples daily. My concern is this... my last test reading was:

ammonia 2.0
nitrite 0
nitrate 0-20
ph 7
gh 75
kh 0-40
chlorine 0


It's been about three weeks and i still haven't seen a rise in nitrites... Is this normal? How high should ammonia get before you see nitrites begin to rise? My first thought is maybe the 2 platies aren't producing enough ammonia fast enough.... Is it possible when cycling a tank for there to never be a nitrite rise? Thanks in advance....
