I live with two declawed cats. Neither of them are mine. but they do not bite either. They use the litter box just fine. I think if they are going to bite they are going to bite no matter what.
I believe in declawing as a last resort. If it's that or to a shelter declaw. What I don't like is when people declaw then decide they don't want the cat after all.
