I drove from Long Beach WA state to Maine with a cat and a dog. I would get a large dog crate to crate your cat or cats in. Put a little box in there. I would only feed or water them when you stop so it doesn't spill.
Make sure you have a harness with ID tags, emergency phone numbers. I kept a leash on Crash (the cat) just in case she escaped. She did wonderful. The first night I did lose her in the hotel. After that I made her sleep in the car. It wasn't cold out yet.
