I've actually been working on this with my Chessie. One thing I did was get cable ties and bundle the cables as much as possible and coil excess cables so I don't have a spaghetti bowl of cables. On some cords, I've taken a wet paper towel to wet the cable and then take a big pinch of cayenne pepper and smear it on the wet part of the cable where I've caught him trying to chew. The wetness will make the pepper stick to the cable until he tries biting on it, gets some in his mouth, and then walks away shaking his head.
