I would start with the book Dr. Pitcairn's Complete Guide to Natural Health for Dogs and Cats by Richard Pitcairn DVM and Susan Hubble Pitcairn. It is excellent and includes many different diets, including a couple of VERY simple ones you can make when you are pressed for time.

I only make the cats' food about once every two or three weeks. I prepare it, I put it in tupperware type containers, and I store it in the freezer. Then I just pull each one out the night before, dish it out in the AM for their morning meal, and pop it in the fridge, then use the rest for their evening meal. It really couldn't be easier! I use the recipe Fatty Feline Fare from Dr. Pitcairn's book.

I gave suggestions on finding a holistic vet in my last post.
