Getting variety into diet

I have had Aziz, a saharan, for a bit over a year. He loves his spring mix lettuce, but he won't eat much else. I know they are seasonal eaters, and he does tend to eat more lentils in the winter. I have tried introducing other uro approved foods, but he just pulls the lettuce out from under them. I have tried shredding and chopping, frozen/thawed, rehydrated, fresh. He won't even touch fruits. My vet said his bloodwork is good. I just would like to give him a more well rounded diet and more variety in life. Any suggestions would be great, thanks.
