Iguanas shed in patches, unlike snakes which shed their entire body at once. At least from my experience with my old iguana shedding usually started at the face. You'll notice the skin looks grayish/whitish, it will raise and then start peeling off. Generally you shouldn't pull the skin, just let nature do its thing. Keeping the humidity at the appropriate level and spraying the iguana during the shed will aid in healthy shedding. I never noticed my iguana doing this, but my turtle and clawed frog eat their skin after they shed it. The frog is really cool, she'll just make a quick kicking motion which throws her old skin over the head (like taking off a shirt!) and then she gobbles it down (underwater makes it easy). My turtle generally just eats the skin coming off on his front legs - he is a strange one though. Hope this helps.
