"Do you think that the vermiculite is absorbing the water from the humid air and transferring whatever moisture to the eggs in lower doses or do you think that the eggs are just absorbing whatever moisture is needed from the air itself?"

I believe both is happening. I also believe that the more egg surface exposed to air the higher the levels of respiration for the embryo which I believe is also benifitial.
