Probing basically uses metal instruments to measure the depth of male/female sex organ depth. I do not recommend this with any plated lizard species as injury to sexual organs happens more often, thus no viable breeding. Femoral pores are best way to check.
In order to breed you need to establish breeding groups and/or colonies. Setup, lighting, diet are factors in this also. How are yours setup? What lighting cycles are you using? What are you feeding them? What feeding cycles? No, do not cool them down! Lighting and feeding is the key. Let me know what you are doing and I will get you started. Females will start coming in November through February-African Imports. Deparasitizing is not hard, quarenteen not hard either. Save money for shipping in our winter, and plan on buying a small group to sort your own sexes out (importers/petshops just don't always have time or knoweledge). Some considerations to think about, let me know.
