Falconry is the name of the sport using trained raptors for hunting. The term "hawking" is just the verb, i.e: I'm going hawking. You don't keep these birds in cages, the proper term is a mew, or mews. And the size varies for the type of bird you have. You have to do an apprenticeship for 2 years, where you are under the supervision of a master falconer (someone who has practiced falconry for at least 7 years.)
Vultures are not falconry birds, they are carrion eaters only, there is no hunting involved with them.
