Pros & Cons
In defense of the breeder, it is difficult to see how well little kittens are conforming to the breed standard. While some breeders allow the first person to pick the first kitten, others will reserve the right to retain kittens of "breed quality" as they mature. Pre-selling a kittens is standard in the industry in order to try to sell the entire litter quickly.
On the other hand, I don't think much of the behavior. Once the breeder made a commitment to you regarding a specific kitten, that commitment should be honored.
The relationship between breeder and client may extend for a while due to kitten illness, questions, etc. and this seems to be getting of on the wrong foot.
